Almonds, pasta, and oil: how to protect them from the summer heat

The heat and summer have officially arrived, with high temperatures across all Italian regions. The heat, especially the extreme and increasingly unpredictable kind we've seen lately, is an additional challenge for preserving some of the more delicate and perishable food products. Moreover, with holidays approaching, you might leave them in the pantry for a long time, risking spoilage.

To prevent this, in this article we will see how to best preserve almonds, artisanal pasta, and extra virgin olive oil to enjoy all their taste, quality, and nutritional qualities, while also avoiding waste.

HOW TO STORE ALMONDS

Almonds, like our Pizzuta di Avola, are a concentrate of flavor and nutrition, but they are also very sensitive to heat and humidity. To keep them fresh and prevent the unsaturated fats they are rich in from going rancid:

  • Always store almonds in a cool, dry place, away from heat sources and direct light. Ideally, a ventilated pantry that you regularly check to detect when temperatures become too high. In case of particularly high temperatures, the refrigerator is the best choice.
  • Prefer glass or tin containers that seal well or are airtight: they protect almonds from air, external odors, and keep the temperature stable even as it rises.
  • Avoid plastic packaging for long periods: it can trap moisture creating condensation, alter the flavor, and lead to rancidity.

 

HOW TO STORE ARTISANAL PASTA

Pasta, especially artisanal pasta, requires special care in summer. Although it is more stable than almonds, its aromas and texture can easily change with a strong increase in temperature and humidity:

  • Store pasta in a cool, dry place away from light. An airtight glass or tin container is perfect to prevent it from absorbing moisture or odors, so consider changing the container after opening the original packaging. If in doubt or if you plan to be away for a while, the refrigerator is also the safest choice here.
  • Always check that the container is tightly closed. In summer, pasta tends to easily absorb ambient humidity, losing its characteristic texture.
  • Consume pasta soon after purchase: this will allow you to enjoy all the flavors and aromas that characterize Sicilian wheat, especially Perciasacchi.

 

HOW TO STORE EXTRA VIRGIN OLIVE OIL

Extra virgin olive oil is one of the most delicate excellences in our pantry. Heat is its number one enemy: the ideal storage temperature is between 14°C and 18°C. Temperatures above 25°C can accelerate rancidity and alter the oil’s aroma and flavor.

  • Store oil in dark bottles, tightly closed, away from light and heat sources (such as stoves or sunny windows).
  • Also opt for a cool pantry or cellar, especially if you store large quantities like the 5L cans.
  • In this case, avoid the refrigerator as it would lower the oil below its ideal storage temperature, unless ambient temperatures are really high and there is no other solution.

Preventing food from spoiling due to high summer temperatures is a good practice to avoid waste and honor the work of those who produce it.
